It was a crazy, busy weekend. Prom, parties and the regular onslaught of kid activities. The rain stopped once or twice to let the clouds refuel…that was it. So by Sunday evening I was in NO mood to cook anything fancy. Unfortunately I still wanted a cozy family meal to draw everyone back to the table to reconnect a little. Ya know, catch up on all the news? Hard to do when all of us are constantly going in eight different directions! I decided on roast chicken. My comfort food back up. Picked up a couple of birds, stuffed them with cut up lemons, a few cloves of garlic and a generous amount of fresh rosemary from my garden, sprinkled them with Sel de Provence from The Salt Dispensary (yum), trussed ’em and threw them in the oven. Easy peasy. With chicken roasting slowly in the oven, there’s always the added bonus of your kids walking into the kitchen every once in while…drawing in a deep breath and exclaiming they can’t wait for dinner, yup, it’s great bait. I whipped up roasted garlic mashed potatoes, made a tasty tarragon gravy and tossed our steamed carrots and green beans with pear and ginger balsamic vinegar from Fabulous Foccacia (more yum). It worked, not much fuss…great food, fun gathering.
Although I love the roast chicken dinner, my favourite thing is always using the leftovers. Now I have a beautiful chicken stock bubbling on the stove waiting to be turned into soup and we had enough chicken leftovers to make some chicken salad. This is a variation on the regular one that my whole family loves. Try it out, even my finicky ones dig it.
Curry Chicken Apple Wraps
To make fresh mayo: Whisk an egg yolk, 2 tsp white wine vinegar, 1 tsp. dijon mustard, whisk in approximately 3/4 to 1 cup olive or canola oil until creamy. Add a squeeze of lemon juice and salt & pepper to taste.
- 4 cups cooked chicken, roughly chopped
- 2-3 cups crisp apples, skinned and medium dice
- 1 cup celery, medium dice
- ¾ cup mayonnaise (see summary for home made recipe)
- ¼ cup white wine vinegar
- 3 tsp. medium or hot curry powder
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. turmeric
- 1 tsp. thyme
- pinch of salt
- Step 1 Toss chicken, apples and celery in a medium sized bowl. Mix gently.
- Step 2 Whisk mayo and vinegar, add all spices, ensure it is all mixed through.
- Step 3 Add dressing to chicken mix, toss together and serve between bread for a sandwich or on wraps or just lettuce.
