Just Another Manic Monday Muffins

Here I am…wishing it were Sunday, cause that’s my fun day. If it can’t be Sunday we can at least start Monday off right…with fresh baked muffins! Woke up to an invasion of fruit flies in the kitchen this morning. Gross, I dislike fruit flies intensely. We had a busy, active weekend & I find bananas challenging to take along…so they sat…sad and alone in the fruit bowl. So I mashed them up & put them to good use!

This muffin recipe is one I use a lot , where I sneak in a few healthier ingredients along with the treat foods, the kids don’t seem to mind that way and I feel better about watching them gobble them down. I prefer using the giant muffin tins, the muffins are like a meal that way. Substantial and hearty…just like Monday.

Yield: 1 Dozen Extra Large Muffins

Dry Ingredients:

  • 3 cups flour
  • 1  cup rolled oats
  • ½ cup ground flax meal
  • ½ cup hemp hearts
  • 1 cup brown sugar
  • 1 cup coconut sugar
  • 3 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt

Wet Ingredients:

  • 5 eggs
  • 2 cups buttermilk
  • 3 cups mashed bananas
  • 1 cup melted butter
  • 2 tsp vanilla

Topping:

  • 1 cup soft butter
  • ½ cup brown sugar
  • ½ cup hemp hearts
  • ½ cup chia seeds
  • 1 cup dark chocolate chips

Method:

  1. Pre-heat oven to 375°
  2. Grease extra large muffin tin
  3. Mix all of the dry ingredients together in a large bowl, form a well in the center of the flour mixture.
  4. In another bowl, gently whisk all of the wet ingredients together.
  5. Slowly add wet ingredients to well in dry ingredients and mix together, just until everything is fully moistened.
  6. Spoon into muffin tins.
  7. Mix together all of the topping ingredients, except the chocolate chips.
  8. Sprinkle chips over muffins, sprinkle crumbled topping over chips
  9. Bake for 25-30 minutes in center of oven (tops should be firm)
  10. Cool for 5-10 minutes in pan & Enjoy!!

  • Looks yummy, can’t wait to try these! Where do you purchase hemp hearts – grocery store or health food store? Also, hoping you will do a blog on that amazing summer salad you made for the grade 7 BBQ you hosted – with the pear and potatoes! Amazing combination!

    • Hi Shannon! I almost forgot about that salad… I will have to share that one, thanks! I get hemp hearts at Costco here, but I’m sure you can find them at the health food store or even Safeway…let me know where you find them 🙂

  • For the fruit flies, a paper cone trap works well. Fascinating for the wee ones to watch how the flies get trapped. With piece of fruit in the bottom (ripe nectarine, banana chunk, etc.), placed in the same location that you had your fruit bowl, the flies will be trapped in a few hours. If you don’t want to start breeding new flies, be sure to empty your trap every day or so.
